Chocolate Chip Meringue Cookies

  • 3 large egg whites

  • 1/4 tsp cream of tartar

  • 1/4 tsp salt

  • 1 c sugar

  • 3 tbsp unsweetened cocoa OR 3 tbsp jello packet flavor of choice (may want to use slightly less than 3 tbsp for jello, as it takes away the stiffness)

  • 3 tbsp mini chocolate chips or a semi sweet baking chip (optional)

Preheat oven to 300 degrees F

Beat egg whites, tartar, and salt at high speed until soft peaks form.

Adding one tbsp of sugar at a time, beat on high until stiff peaks form.

Sift cocoa over mixture and fold in using a spatula or large spoon. Then fold in mini chips the same way.

Cover baking sheet in parchment paper. Dollop mixture on baking sheet by the tablespoon.

Bake 40 minutes. Cool on pan 15 - 20 minutes. Makes 4 dozen cookies.

These are so easy and quick to whip up (but take a long time in the oven). Here I used raspberry flavored jello mix so I could still use the chocolate chips! I actually halfed my batch, then did 1.5 tbsp of cocoa in one bowl, and 1.25 tbsp raspberry jello (one full packet) in another bowl, and then added chips.

I feel like these are a long lost wonderful christmas cookie and add depth to the typical cookie platters! Crunchy on the outside, gooey & chewy on the inside.
